Carnitas Uruapan is named for Uruapan, Michoacán, the home of one of Mexico's best-loved carnitas traditions. Since 1995 we have brought that tradition to West Santa Ana. We cook the way the recipe was meant to be cooked: slowly, patiently, and with respect for the meat.
